Tajine bil Hut - Fish Stew
Serves about 6.
- 4 tablespoons olive oil
- 2 lb fish fillet, any kind, cut in 1-2″ pieces
- 1 large onion, finely chopped
- 1 cup chopped celery stalk
- 1 small hot pepper, finely chopped
- 4 cloves of garlic
- 4 potatoes, sliced about 1/4 inch thick
- 2 cups stewed tomatoes
- 1 1/2 teaspoons salt
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon pepper
- 2 tablespoons lemon juice
- 1/2 cup water
Heat oil in a saucepan, then sauté onion, celery, hot pepper and garlic over medium heat for 10 minutes. Spread potato slices evenly over top, then top with fish pieces. Combine remaining ingredients then pour over top. Cover then cook over low heat for 1 hour, adding a little more water if necessary. Serve hot with cooked rice.
