Moroccan Spicy Shrimp
By: Habeeb Salloum/Arab America Contributing Writer
Throughout my culinary travels I have learned, indeed, that those countries that are lucky to border the Mediterranean offer the finest in seafood cuisine. The Moroccan kitchen is proof in point, especially with their highly rated deep-in-flavour shrimp.
Of the varieties of these dishes is the Moroccan slightly spicy shrimp that takes only a few minutes to make, best served with a side of couscous or even French fries.
Serves 4
1 tablespoon flour
1 1/2 teaspoons paprika
3/4 teaspoon salt
2 teaspoons garlic powder
1 teaspoon cumin
1/2 teaspoon brown sugar
1/2 teaspoon ground coriander seeds
1/4 teaspoon ground ginger
1/4 teaspoon turmeric
pinch of cayenne
1/8 teaspoon black pepper
1/8 teaspoon ground cardamom
1-pound medium shrimp, peeled and deveined
4 tablespoons olive oil
In a mixing bowl, stir together all the ingredients except for the shrimp and olive oil. Add the shrimp and toss until well-coated.
In a frying pan, heat the oil over medium-high, add the shrimp and cook for 4 minutes, turning over once.
Transfer to plate and serve hot.
