Join food historian and chef-instructor Arnold Grubb as he guides you through the evolution of the Mediterranean food culture known today as tapas or small plates. Originally derived from the Persian word maza, meaning “to relish”, mezze (Turkish for “appetizer”) has become the backbone of Mediterranean cuisines from Portugal to Syria and all points in between. To the Spanish, tapas. The Italians, antipasti. The Greeks and Balkans call it mezé or mezédhes. The Turks mezze. Whatever the name, they all have one thing in common: collections of small, highly portable, simple, delicious dishes designed to be shared.

Chef Arnold will introduce you to a 2000-year old recipe for epityrum, an herbed olive relish from the Roman republic, an Egyptian hummus kassa that predates the dawn of Islam, a Lebanese Fattoush salad that has been a staple on Levantine dinner tables for hundreds of years, and the zesty Turkish ancestor of tzatziki, called cacik, as well as a fresh melon and mint salad and poached shrimp dumplings, both from the author of the first known cookbook in history, Marcus Gavius Apicius.

You’ll learn how to give new life to familiar old spices and herbs, and experience a few new ones, as well, to brighten up your palate and revitalize your pantry, using fresh, whole ingredients that will showcase the wonderfully broad array of Mediterranean flavors. Plus, your heart will thank you for ditching the modern, mass-produced, chemically laden convenience foods of today, in favor of simple dishes full of heart-healthy fats, whole grains and complete proteins, that are both delicious and as easy and quick to make as any microwave dinner (maybe even quicker). And at the end of the course, you’ll be able to enjoy all your creations, along with a refreshing Moroccan mint iced tea and a surprise treat, prepared specially for you by the chef, himself.
